Her Story
Born in Argentina and now based in Spain, Mimi Pallette is a singer-songwriter whose music blends intimate folk storytelling with the raw edge of alt country. She began singing at an early age, later taking up the guitar and piano, the instruments behind her songwriting.
Mimi studied music formally and now shares her knowledge as a vocal coach, balancing technique with emotional expression. Before pursuing music full-time, she also worked as a pastry chef, with her last kitchen role at a five-star hotel in the west of Ireland. It was there, between quiet landscapes and long shifts, that the first sparks of the album Milk & Whiskey began to take shape.
Her songwriting is inspired by nature, folklore, and the contrasts of life. Telling stories that are deeply personal and rooted in honesty, her debut album was recorded in April 2025 at the legendary Eastcote Studios in Notting Hill.
And it’s being released January 2026.
